This banana bread is super moist thanks to butter, eggs, and brown sugar (which adds more moisture than white sugar). Plus, ripe mashed bananas have plenty of moisture on their own. Bake the bread until just done to prevent it drying out, and wrap the cooled loaf tightly in plastic wrap or foil to lock in moisture.

Here are a few banana bread tips and tricks from the expert:

Avoid choosing green bananas. Instead opt for ripe bananas that are yellow with a few brown spots.
The best and easiest way to mash bananas? With a fork!
Stir just until the dry ingredients are incorporated. Overmixing can result in dense, tough bread.
Start checking a few minutes early; the bread is done when a toothpick comes out with moist crumbs, not wet batter.
